Raising good cooks: part three

There are few things more frustrating to me than trying to cook something without the right tools. Just like in carpentry, you need the right tool of the right job. I don’t mean a lot of fussy gadgets to clutter your kitchen, but the basic tools necessary to create almost anything you want to make in the kitchen.

There is a skill to setting up a good kitchen. With ten basic categories you can have a well-prepared kitchen that will be ready for any dish you want to prepare.

cookware. Quality cookware is a must. And knowing when to use what pan is a skill in itself. A basic set with a saute pan, a skillet, a stock pot and a couple of sauce pans will get you going.

cookbooks. Two basic, complete books are really all you need.

Foil, plastic wrap and parchment paper. Having the right tool makes cooking so much easier.

utensils. Whisks, slotted spoons, colanders, spatulas, a non-porous cutting board and ladles make cooking so much easier.

bakeware. It is hard to bake without a few basic pans and baking dishes. Two round cake pans, a sheet cake pan and an 8X8 square pans are three to start with. An maybe a glass dish for casseroles.

measuring tools. It’s impossible to cook accurately without quality measuring sups and spoons.

storage containers. You need somewhere to keep your leftovers so you aren’t storing food in your serving dishes or cookware.

mixing bowls. It’s hard to mix a cake in a cereal bowl. Three sizes are adequate.

electric tools. A mixer and blender are almost indispensable. Others you may want to invest in include a microwave, a food processor, a crock pot and a toaster oven.

rags, oven mitts and towels. You can’t get hot food out of the oven without one. And you need rags for cleaning too.

Raising good cooks: part 2

Becoming a good cook isn’t about being flashy or complicated. I think the best cooks are a ones with a few simple techniques that they do well. There are some things that will give any cook confidence.

Reading a recipe. Knowing how the recipe will flow helps you be a more confident cook. And also knowing if you have the ingredients/equipment on hand is good to know too.

Knife skills. Learn chopping, dicing, peeling, and the right knife to use.

Measuring. Liquid measuring cups are different than dry measuring cups. They should not be interchanged. Learning the abbreviations for measurements is important too. And how to accurately measure dry ingredients like flour. Math is important here, because you want to try your hand at doubling or tripling recipes or seeing if you have enough of an ingredient on hand.

Greasing and/or flouring pans. Not hard, but useful.

Methods for mixing. Whipping, folding, stirring, etc. are the most basic food preparatory skills.

Reading food labels. Eating healthier begins with knowledge of what you are buying.

Planning a menu. Food choices are fundamental to good cooking.

Culinary lexicon. It is necessary to know terms such as braise, simmer, saute and soft ball. Learning basic terms will make you a better cook because you will know what you need to do.

Equipment. Know what basic tools are and how to use them. These are basic tools like whisks and electric tools like blenders.

Food safety. This is a biggie. Know when food is unsafe, how to store food properly and first aid too (treating burns and cuts, for example).

Cleaning up. Sanitation, or how to properly clean cutting boards, counters, non-stick pans and knives. You may want to include stain treatment/removal.

Raising good cooks: part one

When it comes to preparing your children (daughters and sons) for adulthood, kitchen skills can be a little overwhelming. All that goes into keeping a good kitchen is daunting, especially if you are a perfectionist or feel you lack skills in this area. Pick recipes from a favorite cookbook or family album and get to practicing.

Part one in this series is a list of recipes. A good cook does not need a hundred recipes. Ten simple recipes are all you need to master. This will give your child a wide variety of menus that will serve them well. Once you master each of these recipes you are able to improvise and create an almost endless menu. And they are all easy to double or triple for crowd pleasing meals too.

Pancakes. Making good pancakes takes skill, and making the batter from scratch is helpful. Adding a couple of Tbsp of oil transforms it into waffle mix. You can shake things up by adding fruit or other toppings and pancakes are a winner for breakfast or dinner.

Soup. Knowing how to make a basic soup is essential. Whatever soup your family loves most, learning a basic soup is important. Once you do, you can vary the ingredients to make an infinite variety for any season of the year. (And your college student will never have to settle for Ramen or canned soup!)

Basic spaghetti sauce. This is the basis for almost any variety of Italian dish. A good tomato based spaghetti sauce can feed an army of friends and family and it’s an inexpensive way to impress someone you love. Ladle it over pasta or veggies for a winner every time.

A casserole. Casseroles are another dish that you can change up a million ways. Once you understand the basics you can add any number of ingredients and always get it right.

Baked bird (for meat eaters). Another simple skill that will take you far in the kitchen. Start with a chicken. And when you are feeling ambitious, try your hand at making gravy with no lumps!

Cookies. Knowing how to bake cookies is essential. They are great gifts and snacks. They are easy to make and fun to serve.

Cake. There is really no substitute to homemade cake (except maybe angel food!). Basic cakes are not difficult and the results are tasty. And a college kid or newlywed can afford to make a cake a lot easier than buy one.

Chili. Another dinnertime staple. Vegetarian or meaty, leftovers are great too. Good chili will keep people coming around.

White sauce. This is a foundation for many things like casseroles, mac and cheese and some soups.

Bread. Again, this is a money saver. Making your own rolls and bread is all natural and you can’t beat the smell of fresh baked bread. There are tons of recipes out there to experiment with to find one that is easy and mistake-proof (most of the time). Cornbread, quick bread, yeast bread, pick something and work on it.

These ten basic recipes are things your kids can work on from upper elementary age so that by the time they leave your home they are armed with somple but tasty recipes that will save money and keep them–and their friends–happy for years. Of course, there may be things that your family loves that you wish to substitute.

Practical application of timelines

This is a guest post by JoAnne Bennett, a dear friend and mentor. She was kind enough to provide the following post and I’m so glad she did.

We will use the time line for the facts which must be memorized for that unit.  As we do an overview to introduce the unit, I emphasize that these are the most important events.  We will add other significant events as they are discovered and discuss their relation to the major events.

We usually draw separate time lines for political events and for spiritual developments during that period of history.  For literature, we will do one for the author’s life time and another for the setting of the story or the main character’s life.

The applications for time lines are numerous.  Perhaps the most indispensable is to show relationships between events.  One method is to use parallel time lines on the same page to  show cause and effect.  You can then draw  arrows from one line to the other to dramatize the relationship.  For example, make a line for a Washington’s life and one for the historical events of that time.  Note how the events around the man affected his attitudes and

accomplishments.  If he responded positively, the events could cause him to rise to greatness.  Point out that in every crisis God raises up a man to meet the needs of His people.

Another way to use parallel time lines is to color code specific periods or events.  When we studied the Middle Ages, we designated historic events on the basic time line.  Then we entered the periods of art and architecture as colored parallel lines: Byzantine was blue, Romanesque was red, and Gothic was yellow.  It was easy to see the political turmoil of the fifth and sixth centuries in Europe had a relationship to the simplicity of art and the elaborate adornment of the Gothic developed as prosperity came to the nobility through the feudal system.

Time lines give order and perspective to the events we study.  When we look at the “coon skin cap” and the “whale” stuck to our time line, it would be simple for even small children to reason that the time span is too wide for Jonah together.  Notice also how the important events get closer and closer together until, by the end, labels and pictures will overlap.  God is certainly moving faster as we near the end of  “the days of man.”

Another use of time lines is for periodic review.  No matter what time period we are studying, I will occasionally call for a “pop test” of  U.S. history.  This is based on a time line we did which includes crucial developments such as Columbus in 1492, Pilgrims in 1620, Revolution in 1776, Civil War in 1860’s, World War I & II, etc.  When we hear some news story which compares an event to the Great Depression, I want my children to be able to tie that to something concrete in their minds. Having them draw a time line to recall those facts has been the most efficient use of our time.  It is much faster than writing an essay question or having mother devise a fill-in-the-blanks test — and it is quicker to grade.

GO FORTH AND DRAW TIME LINES
Take the ideas I have presented and personalize them.  Improvise!  Improve!  See how many varieties you can use!  I believe you will agree it is one of the handiest tools in your “teacher’s bag.”

Yes, home educating is my job

I used to bristle a little when people would ask me what I “do,” only because my answer seemed to disappoint them. It implies that work outside the home is somehow more valuable than what I “do” within these four walls. Now that I have given it some thought, I am glad to say that home educating is my job. People with a “job” have:


A defined task(s). I have the task of teaching my kids. Love it. Best job I have ever had. And I have to plan. I have a defined set of tasks that I prepare for. I am not a mom that does well with unstructured or vague school time. I know that all of life is learning but I am also obligated to make sure they can work with numbers, read and write and know something about the natural world. For my family that is best done with a set time for lessons and my kids look forward (most of the time) to learning something new that I have prepared ahead for them.

Measurable goals. My Bible is my standard. It’s filled with my goals. I try to evaluate myself regularly and I ask my

husband to do so as well. Once in a while, when I’m feeling especially brave, I will ask my kids how I’m doing. That always gets me more than I bargained for. They are also surprisingly gentle. They often focus on different things than I do and they help me lighten up a bit.

I also set yearly and long term goals for each of my children, and for our home education in general.

Opportunity for advancement. I get promoted every year. It’s never boring and I get to constantly experience new things alongside my kiddos.

A schedule. There are certain hours for working certain jobs. I find we are the most productive when I guard our homeschooling hours. If I schedule time that is dedicated to learning and actually stay home to homeschool, amazing things happen. My children thrive on routine and a regular schedule is a tool that will make learning easier and more productive.

Commitment. Companies expect commitment and loyalty. I have to be invested if I am to do a good job. I believe if you are going to homeschool you have to be all in or it won’t work. When you are tentative your kids sense the wavering and school won’t go as smoothly. Whatever you do, do with all your might. If you are going to homeschool, why not go for it? You will have a much more fulfilling experience when you do.

A boss. I work for Him. I’m not trying to sound super-spiritual, but it’s true. He’s Who I most care to please. I look forward to the day I hope to hear “Well done, thou good and faithful servant.”

Remuneration. My pay comes in the form of well-written papers, drive-by hugs, and peanut butter sandwiches with my kids as we watch the clouds. Contrary to popular belief, it’s not all about the “Benjamins.” When my daughter won the essay contest I was paid. My hard work teaching her paid off. I don’t think of their learning success as evaluation as much as payment. And when they are able to receive scholarships to university because of what we have done in our little homeschool, I really will get paid.

Benefits. I have a day that I can schedule and a life that I order, with God’s help. I have vacations, days off (for errands) and sick days (not mine, theirs). My benefits include snuggling to read in the middle of the day and being a part of my childrens’ light bulb moments. Benefits are not always evident, so you have to look out for them and be aware–things like flexibility of schedule for things like doctor visits, not having to get out in the cold and snow to take them to school, being able to travel, taking special field trips to enhance learning and tailoring your child’s lessons to their learning style and bent.

I just love going to my local used home school store. The woman that runs it is a walking home school catalog. Her knowledge of all the different curricula is staggering. And there is where I happen upon most of my home school loves.

My newest favorite resources are these giant, yet unassuming books. They may not sound like a big deal, but they are–at least they should be.

I am in love with all the Teacher’s Book of Lists books (available at Amazon and other online bookstores). They are worth their weight in gold. Yes you can probably find all the information on the Internet, if you took months, and even then you may not find it all. Why put yourself through that? It’s organized and at your fingertips right in this book. For example, some things included in the comprehensive science book are:

  • plant terminology and classification
  • dyeing procedures (from plant sources)
  • animal classification, reproductive and life cycles
  • major terms of the 10 human body systems
  • determining to mole of a compound
  • balancing chemical equations
  • isotopes of chemical equations
  • classification of energy
  • calculating the specific gravity of a mineral
  • codes for weather symbols
  • classification of stars by color and temperature
  • base two
  • checklists for graphing conventions
  • metric conversions
  • professional publications
  • science fair project information and checklists

And that’s just a few of other over 290 lists. In the literature book you can find 247 lists like vocabulary lists for all sorts of writing; lists by theme, genre and author; lists of award winners and books that have been made into movies. You can search by literary period, find a nice list comparing gods and goddesses and even lists of famous characters.

I think you get the point. You will be so glad you have these books on your lesson plan bookshelf. It is saving me so much time looking up things that I need to grab and move on. These book keep me from getting lost in the details, so I can focus on the principles I want to teach. These lists are great for illustrating principles, gleaning ideas for reading lists and essay questions and for just plain fact-gathering and they cover k-12, so there are no other books to buy (always a winner to me!).

If you prefer integrated studies, these are still valuable. You can use them as project starters, essay fodder and just general resource. Because they are broken down by subject you are able to hone in on just the info you need. You can also see who the subjects intertwine. And you can use them to make mini offices for your kids on any subject. If you aren’t convinced by now, you are a hopeless case. Average kids are gonna rule the world

I’m convinced of it. The over-achievers are distracted with perfection and, well, over achieving. Their parents make sure they always get a trophy and always get an A and that they always feel good.

The slackers aren’t a threat because they are mostly lazy–mentally, if not physically. Their parents might not make them do chores if they don’t feel like it. They may just lack ambition and their parents don’t require more. But they are not doing much. And they aren’t going to do much. At least not unless their feelings say so.

It’s the average kids who are gonna get ‘er done. They’re the ones with a healthy self-image and a solid work ethic. Their parents aren’t so concerned with their kids’ feelings. They’re more concerned with their character–which they know is lacking at times. These kids know they aren’t always the best but they’re okay with that. The average kids know their limitations. They know they have to work hard to do things because not everything comes easily to them. But they appreciate the reward of hard work and know that if they try they can probably do it. And if they work really hard maybe they can do it really well.

There are average kids in the news every day, doing little works with love. Helping a neighbor. Writing a pen pal. Maybe even winning an award. But they are still just going to scouts, practicing their music, playing outside, doing their chores. They may not excel at much of anything but they are really good at being average, being themselves.

They know mistakes are for learning, not covering up or running from. Failure can be an excellent teacher and they learn well. Their parents probably didn’t spend a lot of time telling them how they are the most special kid ever and how they are practically perfect in every way. But their parents didn’t insult them or require nothing of them either. Their parents are probably telling them that sometimes life is messy, but they’re good kids and that if they work hard they will have a good life. So they do, and they do. And I pray that more average kids get the idea that average isn’t so average anymore. And that they will band together and take over the world–in an average way.

They know that average is a really good place to be.

He makes all things beautiful in His time

The author of Ecclesiastes makes this statement in chapter 3. There are seasons of life. Some overlap and some are consecutive. Some are short and some long. Some are busy and others not so much.

When my pastor was preaching on this passage a few weeks ago something resonated with me. God’s time is beautiful. His seasons for us are beautiful. If your life is messy and frustrating, maybe it’s time to check and see if God is in the middle of what you are doing.

When your actions are lined up with God’s will, it will be beautiful. He has a prefect plan and He’s working it perfectly. When we get on board with that, the results are lovely. They are something others can see and enjoy. And maybe even want to have in their own lives.

I would also go so far as to say that He can make things beautiful that we have royally messed up. He can give beauty for ashes. Our little heap of ashes can become something to treasure. I don’t at all mean that struggles mean that you are doing something wrong. Life is hard. And messy sometimes too. It’s just that God has this amazing way to making it lovely. And sometimes things can seem messy at the time because all we can see are the details. When you step back and look you can see that God was working all things together for your good.

Keep on keeping on

With all the trappings of Biblical Principle Approach–word studies, 4-Ring, notebooks, the Red Books, Rudiments, etc.–you can easily get overwhelmed and frustrated. Your idea of home education is not becoming reality and you find yourself tired and frustrated. What do you? Chuck it? Put the kids in school? Change to yet another curriculum? Run away from home?

Unless you are a homeschooler with steely resolve, frustrating times can make you question you methods, your philosophy and–on a bad day–maybe even your sanity. When homeschool life is hard here are some things to  help keep you going.

  • Pray and ask God to help you. The Holy Spirit is always available to listen.
  • Realize this is temporary. This crisis, this illness, this life itself is temporary. Don’t lose sight of the transient nature of life.
  •  Use a lifeline. Call a friend. Read your Bible. Take a hot bath. Take the school day off. Do something that re-energises you.
  • Take school slow. Slow down. Find a rabbit trail, put your lessons on hold for a few days while you learn about something interesting and unexpected.
  •  Just cover the basics. Don’t try to do more until you can do more. Your kids won’t suffer.
  •  Write down your philosophy of education, any scriptures that you feel apply to your schooling and any inspiring quotes. Put them in a nice book and use it to encourage yourself. When times are hard, pull out that book and remind yourself why you are doing this.
  • Keep a journal. It is great to vent your frustrations, question things and just plain old talk to yourself. It’s also a great place to encourage yourself and to keep record of life’s little successes.
  • Take stock. Review some past work and see how far you really have come. It will jog your memory to character issues that have resolved or funny things that happened.
  • Let your kids teach you. Put them in the hot seat and let them show you what they have learned. That will be good for a laugh or two and you may be surprised at how knowledgeable they really are.
  • Reach out to encourage another mom. So many times when I am down I will call or write another mom and it lifts me up as well.

Enjoying a good word study

Word studies are hard. And dry. And time-consuming. At least that’s how some people see it. Even the title makes me chortle. Who ever heard of such a thing as actually being fun? Well, everything we do for our kids’ education can be something we enjoy. If not all of it, then at least some part.

You may not know what a word study is. Or you may avoid them. Or you may do them and not know them by that name. Whatever category you fit in, I think you can see word studies not as a necessary evil, but as an important tool in your home educating process. Any home educator can implement word studies, no matter what approach or curriculum is in use. It’s a powerful way to bring a subject alive for teacher and student.

…Children in whom was no blemish, but well favoured, and skilful in all wisdom,  and cunning in knowledge, and understanding science, and such as had ability in them to stand in the king’s palace, and whom they might teach…   Daniel 1:4 KJV

A word study is simple and straightforward. One way to do one is as follows:

  1. Choose a key word from your study in any subject.
  2. Define the word from Webster’s 1828 dictionary.
  3. Underline key words in the definition and look those up in the 1828.
  4. When you feel you have defined it sufficiently, begin to find the words you underlined in a Bible concordance. Write down any scripture you deem relevant to the words and definitions.
  5. Using all this information, write your own definition of the word.
  6. Using the information you have gathered, deduce the Biblical principle from the study.

When your words came, I ate them; they were my joy and my heart’s delight, for I bear your name, O LORD God Almighty. Jer. 15:16 NIV

Now who wouldn’t like to do that? Seriously, there is something really exciting about learning something new about a word you assumed you knew the definition of. And it’s even more exciting to see what God has to say about that word. Or with that word.  Why do I want to do a word study?

  • To understand the English language better.
  • To have mastery over a topic/subject so I can teach it better.
  • To deepen my understanding.
  • To learn God’s thoughts on a matter.
  • To improve my scholarship.
  • To increase in wisdom.
  • To discover the Biblical principles on a matter.
  • As a springboard for a new/deeper study (AKA “rabbit trail”).

Some tips to enjoy your word study more:

  • Don’t do it when you are tired. Nothing is fun then.
  • Give yourself plenty of time. Do it in chunks even.
  • Pray for wisdom and discernment. Then expect amazing things to happen because God will show up right in the middle of your study.
  • Get your kids involved. Let them be your research assistants. Make it a family affair. (read: don’t be a martyr, studying alone for hours on end with frequent sighing and complaining.)
  • Don’t do them all the time. They are not necessary every week.
  • Don’t give independent word study assignments to young kids. This is a bad idea. When your kids are younger the word studies are for you to digest and give to them on their level. As they get older you can introduce the idea and start walking them through the process in small doses.
  • If you don’t like them, ask God to change your heart. Things you hate to do can actually become joyful times with the Lord. It is always delightful to spend time in His word.
  • Share what you learn with your spouse and anyone else who will listen. Don’t become obnoxious, but share what you learn liberally with others. They probably can use something you learned.
  • Reward yourself when you are done. (Ooooh, I hear M&M’s and a bubble bath calling me, but I digress…)
  • Invest in quality tools. A nice pen, clean paper, a Strong’s concordance will make you more willing to get the job done. And who doesn’t enjoy a nice writing pen?
  • Be willing to stop and enjoy what you are learning. Take a breath, sit back and Selah–think on these things.
